That makes it a preparation hormone: it rises ahead of adversity and also ahead of great things. Picture walking onto a stage in front of a big audience, with cortisol climbing as preparation. At night there is no energy to mobilize, and the body needs to rest and reset.

Food follows the same logic. Foods that increase glucose lower cortisol, and starches buffer it. When blood glucose is elevated, the body isn't tapping its survival system to mobilize glucose. People who eat too few starches often have sleep trouble, and when they add rice, pasta, or oatmeal back they feel more even psychologically, with more physical energy.

How does cortisol raise blood sugar?

Cortisol signals the liver to make new glucose from amino acids and other raw materials, a process called gluconeogenesis. It also reduces glucose uptake by muscle and fat, which leaves more sugar circulating in the blood. At the same time it frees fatty acids from fat stores for fuel. The word glucocorticoid for this class of hormones comes from their effect on glucose.

How do researchers raise cortisol on purpose?

The Trier Social Stress Test, developed in 1993 by Clemens Kirschbaum, Karl-Martin Pirke, and Dirk Hellhammer, asks people to give a speech and do mental arithmetic in front of a stern panel. It reliably raises cortisol in most participants. Cortisol peaks around twenty to thirty minutes after the stress begins. It remains one of the most widely used tests in stress research.

What balances the effect of insulin?

Insulin lowers blood glucose, and a group of counterregulatory hormones raises it. Glucagon and adrenaline act within minutes, while cortisol and growth hormone work over hours. That arrangement keeps blood sugar inside a narrow range between meals and during stress. Without the opposing hormones, insulin alone could push glucose dangerously low.
