Opening day
On opening day all the doors work, there are as many wine glasses as needed, the flowers are beautiful, and not a smudge leaves the kitchen on a plate, because every guest might be a restaurant critic. Over time, things drift sideways.
Beating yesterday
Day one of year 10 or year 20 should be as special as the original, and it should be better, with 20 years of learning behind it, or 40 at Union Square Cafe. A team that does not push for today to beat yesterday only goes backwards.
Who is accountable
When things are not going well, the first person to look at is the owner, and next are the leaders who are not bringing athleticism out of their teams. Athleticism here means dedicating yourself to being your best with whatever gifts you have, and having the mental and emotional mettle to find a way to win. In a city with 26,000 restaurants, plenty of other kitchens know how to make a good burger or a good roast chicken.
How did Amazon turn day one into a motto?
Jeff Bezos made Day 1 a central idea at Amazon. His 1997 shareholder letter described it as still Day 1 for the internet and for the company, and he returned to the phrase in letters for two decades. In his 2016 letter he described Day 2 as stasis, followed by irrelevance, then painful decline, and then death. Amazon named one of its Seattle headquarters buildings Day 1.
How long do restaurants usually last?
A 2005 study by H. G. Parsa and colleagues in the Cornell Hotel and Restaurant Administration Quarterly followed restaurants over several years. It found that roughly 26 percent closed in their first year, far below the 90 percent figure often repeated. Over three years the cumulative closure rate reached nearly 60 percent.
How do Michelin inspectors visit restaurants?
Michelin inspectors visit anonymously and pay their own bills. The Michelin tire company first published the guide in France in 1900 as a free handout for motorists. Inspectors typically visit more than once before awarding or changing a star.
